i m a frontend developer working especially on angular / ionic framework from a couple years.
I ve a huge project that use several plugins from cordova (such as google analytics, firebasex , barcodescanner , …) , i want to know is it worth to migrate my existing project from cordova to capacitor ? how many days could it take to finish it ?

I had several more plugins and it only took me a couple of evenings to migrate them. It’ll depend on the developer though. If you just want to migrate to Capacitor, you can keep your existing Cordova plugins. Capacitor and Cordova plugins can be used side by side.
