Hello I am new to capacitor, I have a query is it possible to create my own User Agent in capacitor for the Android platform?

Yep, you should be able to with the config file.

Though, “here be dragons”. There still are libraries that depend on UA being what they are (like Ionic). So you’re mileage may vary
