Controlling the updates?

How can I control what updated is pushed to the devices?

I thought I can do this with the build settings / versions, but for some reason, my apps, even newer, get updated to a older version. Thats especially while developing a bit of a pain, as the older WebBuild overwrites my local development while testing on devices.

I think I miss something fundamental.
