You could try upgrading Cordova CLI to 9.x and cordova-ios to 5.0.0 - maybe this helps.

I am experiencing the same errors with Cordova CLI 9 and cordova -ios 5.0.0 I think this is an issue with ios-sim and related to this issue

Experiencing the same issue. Tried updating ios-sim and also removing and adding iOS platform again. Nothing helped
